Plant-Based Power: Delicious Vegan Recipes Inspired by Aussie Flavours
Living here in the Great Southern, surrounded by the incredible natural bounty of Western Australia, it’s impossible not to feel inspired by our local produce. From the crisp apples of the South West to the succulent seafood along our coast, our region is a foodie’s paradise. And guess what? You don’t need animal products to capture that delicious Aussie spirit. I’ve been experimenting in my kitchen, right here near Albany, and I’m thrilled to share some plant-based powerhouses that sing with true Aussie flavour.
Gone are the days when vegan eating meant bland salads. We’re talking hearty, satisfying, and utterly delicious meals that showcase the best of what Australia has to offer. Think vibrant colours, robust tastes, and that unmistakable feeling of wholesome goodness. It’s about embracing a lifestyle that’s good for us and good for our beautiful planet.
Breakfast Bliss: Sunshine Coast Smoothie Bowl
Let’s start the day the Aussie way – with a burst of sunshine! This smoothie bowl is inspired by the tropical fruits you find further north, but easily adaptable with our local berries and stone fruits when in season. It’s a quick, nutritious start that’ll keep you going until lunch, whether you’re heading out for a hike in the Porongurup National Park or tackling your garden.
Ingredients:
- 1 cup frozen mango chunks
- 1/2 cup frozen banana slices
- 1/4 cup unsweetened almond milk (or other plant milk)
- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
- Toppings: Fresh berries (strawberries, raspberries), sliced kiwi, toasted coconut flakes, a sprinkle of hemp seeds.
Instructions:
1. Combine the frozen mango, banana, almond milk, chia seeds, and vanilla extract in a high-powered blender.
2. Blend until smooth and creamy. If it’s too thick, add a splash more almond milk. If it’s too thin, add a few more frozen fruit chunks.
3. Pour into a bowl and artfully arrange your favourite toppings. Enjoy immediately!
Lunchtime Legend: “Sausage” Roll with a Twist
The humble sausage roll is an Aussie icon, and I’ve managed to create a plant-based version that’s just as satisfying. This recipe uses lentils and mushrooms for a rich, savoury filling, wrapped in flaky puff pastry. It’s perfect for a picnic overlooking the Southern Ocean or a quick and easy weekday lunch.
Ingredients:
- 1 cup brown or green lentils, cooked and drained
- 150g mushrooms (cremini or button), finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 2 sheets vegan puff pastry
- Plant-based milk, for brushing
Instructions:
1. Sauté the onion and garlic in olive oil in a pan until softened.
2. Add the chopped mushrooms and cook until they release their liquid and begin to brown.
3. Stir in the cooked lentils, sage, thyme, salt, and pepper. Cook for another 5 minutes, mashing some of the lentils to create a cohesive mixture.
4. Let the mixture cool slightly. On a lightly floured surface, cut each puff pastry sheet in half lengthwise.
5. Spoon a generous amount of the lentil mixture onto one half of each pastry strip. Fold the other half over to enclose the filling, pressing the edges to seal.
6. Place the rolls on a baking tray lined with parchment paper. Brush with plant-based milk for a golden finish.
7. Bake in a preheated oven at 200°C (180°C fan-forced) for 20-25 minutes, or until golden brown and puffed up. Serve warm with your favourite sauce, perhaps a homemade tomato relish.
Dinner Delight: “Barramundi” Tacos with Bush Tomato Salsa
Now, for a truly inspired dish that celebrates our unique Australian ingredients. While we won’t be using actual barramundi (though there are some amazing sustainable options if you’re a pescatarian!), we’ll create a flaky, flavourful “fish” using hearts of palm. Paired with a vibrant salsa featuring native Australian flavours, this is a dinner that truly sings of the land and sea.
For the “Barramundi” Filling:
- 2 cans (400g each) hearts of palm, drained and rinsed
- 1 tablespoon nori flakes (for that sea flavour)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Bush Tomato Salsa:
- 1 cup ripe tomatoes, diced (or use a mix of cherry tomatoes)
- 1/4 cup finely chopped red onion
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 tablespoon lime juice
- 1/2 teaspoon dried bush tomato powder (available from specialty Australian food stores) OR 1 teaspoon tomato paste for a similar depth
- Pinch of chili flakes (optional)
- Salt to taste
For Serving:
- Corn or flour tortillas
- Shredded lettuce or cabbage
- Avocado slices
- Vegan aioli or cashew cream
Instructions:
1. Prepare the “Barramundi”: Gently shred the hearts of palm with a fork to resemble fish flakes. In a bowl, toss the shredded hearts of palm with nori flakes, smoked paprika, garlic powder, onion powder, salt, and pepper.
2. Heat olive oil in a non-stick pan over medium heat. Add the seasoned hearts of palm and cook for 5-7 minutes, stirring occasionally, until lightly golden and slightly crispy.
3. Prepare the Salsa: In a separate bowl, combine the diced tomatoes, red onion, coriander, lime juice, bush tomato powder (or tomato paste), chili flakes, and salt. Stir well and let it sit for at least 10 minutes for the flavours to meld.
4. Warm the tortillas according to package instructions.
5. Assemble the Tacos: Fill each tortilla with shredded lettuce, the “barramundi” filling, and a generous spoonful of the bush tomato salsa. Top with avocado slices and a drizzle of vegan aioli or cashew cream.
Sweet Treats: Lamington Bliss Balls
No Aussie-inspired menu is complete without a nod to our beloved lamingtons. These no-bake bliss balls capture that coconutty, chocolatey goodness in a healthier, bite-sized package. They’re perfect for an afternoon pick-me-up or a sweet ending to any meal.
Ingredients:
- 1 cup Medjool dates, pitted
- 1/2 cup rolled oats
- 1/4 cup unsweetened shredded coconut, plus extra for rolling
- 2 tablespoons cocoa powder
- 1 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
1. Soak the dates in warm water for 10 minutes if they are not soft. Drain well.
2. Combine all ingredients in a food processor. Process until the mixture starts to clump together and holds its shape when squeezed.
3. Roll the mixture into small balls, about 2-3 cm in diameter.
4. Roll each ball in extra shredded coconut until fully coated.
5. Place the bliss balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge.
Local Secrets and Substitutions
Living in the Great Southern, we have access to some incredible produce. Don’t be afraid to swap out ingredients based on what’s fresh and in season at your local farmers’ market. If you can’t find bush tomato powder, a little smoked paprika can add a similar smoky depth to the salsa.
For the “barramundi,” if hearts of palm aren’t your thing, firm or extra-firm tofu, pressed and crumbled, can also work beautifully. Just marinate it with similar spices.
Embracing plant-based eating doesn’t mean sacrificing flavour or tradition. It’s about rediscovering classic tastes with a fresh, vibrant, and ethical perspective. These recipes are a starting point; let them inspire you to explore the incredible diversity of Australian flavours, all while enjoying the benefits of plant-based power.
